Wake Up Your Tea

For those who frequently enjoy Puer tea cakes, waking the tea is a crucial first step. Using a tea needle or knife, gently pry the tea leaves from the cake along its natural texture. Place the leaves in a breathable Yixing pot or a clean, odorless porcelain jar. This process not only makes it easier to use daily but also allows the tea to slowly awaken, enhancing its aroma and taste.

Select the Right Teaware

A gaiwan is perfect for new Puer tea, preserving its fresh aroma and lively taste. For aged Puer, a Yixing pot with its unique double-pore structure is ideal. It absorbs unwanted flavors and keeps the tea warm, bringing out the deep, mellow aroma of the aged tea.

Warm Up Your Teaware

Pour boiling water over your gaiwan, Yixing pot, sharing pitcher, and tasting cups. This not only warms the teaware, instantly releasing the tea's aroma, but also shows respect to your guests, reflecting your dedication to the tea ceremony.

Measure Your Tea

A good rule of thumb is a 1:20 tea-to-water ratio. For a 150ml gaiwan, 7-8 grams of tea is typical. Adjust based on your taste—more for a stronger brew, less for a lighter one.

Rinse the Tea

Pour boiling water over the tea leaves and let it sit for about 10 seconds before discarding. This removes any impurities and wakes up the tea. For older Puer, you might rinse it once or twice to fully activate its flavors.

Brew Your Tea

Pour water at around 95°C-100°C over the tea, spiraling slowly down the side of the gaiwan. Avoid direct impact on the leaves to prevent over-extraction. Pour out the first infusion quickly to reveal the tea's initial flavors. Adjust the steeping time based on the concentration and aroma of each infusion.

Serve and Enjoy

Pour the brewed tea evenly into tasting cups using a sharing pitcher. Fill each cup about 70-80% full, a traditional way to show respect. Now, it's time to savor the rich, mellow flavors of your perfectly brewed Puer tea.
